Learn how to make Jianbings with Mr Bing

Join SupChina and Mr Bing for an online cooking lesson on the classic Beijing street food called Jianbing! Buy your ingredients in advance and cook along at home as Brian Goldberg answers all of your most important Jianbing questions.

Ingredients needed to make a Jianbing
Crepe Batter Mixture:  (makes ~ 8-10 bings)
2/3 Cup of Mung Bean Flour / Rice Flour Mix (Rooster Brand);  Can substitute Millet Flour, Purple Rice Flour, etc.
2 Cups All-Purpose (Plain) Flour
1 TB Chinese 5 Spice powder  (or a blend of: Anise, Star Anise, Cinnamon, Ginger, Cloves)
1 TB Salt
3 Cups of Water (Up to 3 cups)
NOTE: If you do not want to make the batter please feel free to buy a large tortilla of your choice to use instead. This is cheating and not 100% authentic but for those that may not have access to flour, this is a suitable substitute.

Additional ingredients, PER bing:
1 Egg or 2 eggs for bigger bings (depend on the size of your pan)
1 TB Sesame seeds (black or white or mixed)
2 TB Scallions/green onions (chopped)
2 TB Cilantro/coriander (chopped)
2 TB Hoisin Sauce / TianMianJiang mix 50/50  (or just Hoisin sauce if you can’t get TianMianJiang)
1 TB Chili paste: LaoGanMa Spicy Chili Crisp, or any Chinese chili sauce
Oil for coating the pan (also for frying the wonton skins if you do that)

Other fillings:
– Crispy Wontons (pre-bagged strips, i.e. for salad topping) OR Wonton wrappers fried in oil (2-4 wonton skins per bing); try to keep them flat, not curled up.
– Shredded lettuce or kimchi.
– Optional protein filling of your choice:  Chopped sausage is easiest.  Diced or shredded chicken, beef, char siu pork, roast duck, etc.

Equipment:
– Cast iron pan, the wider the diameter the better, easier for spreading the bing / flipping the bing; regular pan is fine if you don’t have cast iron.
– Spatula to spread the batter on the pan (A T-shaped crepe spreader is ideal, but not necessary). One more spatula ready to flip the bing.

Born and raised in New York, Brian fell in love with "jianbing" while studying in Beijing in 1998. A graduate of Columbia (MA) & Brandeis (BA) Universities, Brian is fluent in Mandarin Chinese. Prior to launching Mr.Bing - a chain of Beijing-style street crepe shops - he spent 9 years in Asian equity sales & trading (BNP Paribas, Societe Generale, Macquarie), and 3 years as TV news producer & reporter (CNBC, Channel News Asia). Brian qualified for the 2002 Winter Olympics in the sport of "luge", and currently competes in Masters swimming. He originally wrote the business plan for Mr Bing in 2001, while graduate student at Columbia. He lived & worked in China, Singapore, Taiwan & Hong Kong for 13 years, and currently resides in NYC.
